Fruit flapjacks

Great for after school treats.

Makes 8

75g brown sugar

75g butter

2 tbsp golden syrup

125g rolled oats

50g currants or dried mixed fruit

 

Here’s how to make it...  

Preheat oven to 170˚C (150˚C if using a fan oven) or Gas Mark 3. Grease an 18cm square shallow tin. Melt the sugar, fat and syrup together in a pan until sugar is dissolved.

Add oats and fruit and mix through. Spread into tin and press firmly. Bake for 15 – 20 minutes until golden brown.

When cooked, cut into 2 x 6cm fingers and allow to cool in tin. When cooled, remove from tin. 2 Oven Aga, cook on the 4th set of runners in the Roasting Oven for 15 – 20 minutes with the cold plain shelf above.

3 and 4 Oven Aga, cook on the 4th set of runners in the Baking Oven for 15 – 20 minutes. Rayburn, cook on the 4th set of runners in the Main Oven with the Thermodial reading Bake.

Ensure all of the sugar is dissolved to prevent the mix from going grainy.
